How every size you type or read is written: page setup, margins, spacing, bleed and cut sizes. A name is not a size you measured, so a stock button keeps its maker's name either way and 58mm stays 58mm, 7/8 inch stays 7/8 inch.
Which sizes are listed first when you pick one, and the tooling a new design starts on. Every size both presses make is on that list either way, so this hides nothing from you.
What Step 1 offers when you start something new. Work you have already made keeps whatever it was made as, so nothing in your queue or your saved templates moves or disappears.
